Vegan French Crepes
Ingredients:

- 1 cup of all-purpose flour
- 1 tsp of vanilla extract
- 2 tbsp of coconut sugar
- ⅛ tsp of salt
- 1 ½ cup of almond milk
- ¼ cup of applesauce (unsweetened)
- 2 tbsp of coconut oil
- Fruits (e.g. strawberries, blueberries, bananas)
- Vegan whipped cream
- Chocolate sauce
- Cocofrio ice cream
- Sift the all-purpose flour into a large bowl. Add the salt, followed by the almond milk and whisk until the mixture is well combined.
- Add the apple sauce, vanilla extract, coconut sugar and melted coconut oil into the mixture. Whisk until the batter becomes smooth.
- Heat a non-stick pan over low to medium heat. Once heated, pour approximately ¼ cup of batter onto the pan. Quickly rotate the pan to spread the batter. Flip the crepe to cook thoroughly on both sides.
- Set the crepe aside and repeat the process until all the batter is cooked.
- Fold the crepes to serve. Top with fruits, chocolate sauce, vegan whipped cream and serve with your favourite Cocofrio ice cream.
