Vegan French Crepes

  • 1 cup of all-purpose flour
  • 1 tsp of vanilla extract
  • 2 tbsp of coconut sugar
  • ⅛ tsp of salt
  • 1 ½ cup of almond milk
  • ¼ cup of applesauce (unsweetened)
  • 2 tbsp of coconut oil 
Toppings (optional):
  • Fruits (e.g. strawberries, blueberries, bananas)
  • Vegan whipped cream
  • Chocolate sauce
  • Cocofrio ice cream
  1. Sift the all-purpose flour into a large bowl. Add the salt, followed by the almond milk and whisk until the mixture is well combined.
  2. Add the apple sauce, vanilla extract, coconut sugar and melted coconut oil into the mixture. Whisk until the batter becomes smooth.
  3. Heat a non-stick pan over low to medium heat. Once heated, pour approximately ¼ cup of batter onto the pan. Quickly rotate the pan to spread the batter. Flip the crepe to cook thoroughly on both sides.
  4. Set the crepe aside and repeat the process until all the batter is cooked.
  5. Fold the crepes to serve. Top with fruits, chocolate sauce, vegan whipped cream and serve with your favourite Cocofrio ice cream.
