Cocofrio Cake Recipe

Here's an ice cream cake you'll be able to eat for breakfast, snack and dessert. Ingredients (makes 1 cake): 1 overripe banana 1 scoop of Vanilla Sticky Date and Pecan Cocofrio ice cream and one scoop for the topping. 1 teaspoon of baking powder 1 teaspoon vanilla essence 1 egg 1 cup non-gluten flour or quinoa flakes Method: Put the flour, banana, egg, baking powder, Vanilla essence, Cocofrio Vanilla Sticky Date and Pecan ice cream into a blender. Once finished blending then put the mixture into a baking tray. Bake for 15-25 mins (depending on your over) at 160-170 degrees Celsius until golden brown. Serve immediately with a scoop of Cocofrio.

Ingredients 1 tub of Cocofrio Vanilla Sticky Date and Pecan 1 pack of Cocoa Powder 1 of the Canned Cherries/ halved 1 pack of Breadcrumbs   Method Take a Mason Jar and spread a layer of breadcrumbs mixed with cocoa powder Spread the halved cherries on top along with a little canned liquid Add a layer of Cocofrio Vanilla Sticky Date and Pecan on top of it Repeat the layers till your Mason jar is full Top your pudding off with fresh nut and some more berries! Finally, place it in the refrigerator for 15 minutes

Ingredients 4 cups of Cocofrio Vanilla Sticky date pecan Ice-cream 6 baked oatmeal cookies Whipped cream   Strawberry Sauce 1 pint fresh strawberries, halved ¼ cup water 1/3 cup sugar 1 teaspoon vanilla extract   Method Crumble the oatmeal cookies For strawberry syrup, add all ingredients to a medium pot over medium-low heat. Simmer for 2 minutes until strawberries start to break down. Kill the heat on the syrup and let cool. Vegan Strawberry Milkshake

Ingredients ½ Cup Strawberries  ½ Cup Coconut Milk  3 Scoops Cocofrio Strawberry Choc Chip  Whipped Cream (Optional)  Method  Mix together the strawberries, coconut milk, and ice cream in a blender. Drizzle chocolate syrup around the inside of the glass. (optional)  Pour the milkshake into the glass, and top with whipped cream.    ** For extra, natural sweetness, and 2-3 pitted dates to your mix!

Ingredients: Berry sauce 500 g of frozen berries 1 tbsp of sugar ½ tsp of vanilla extract   Waffles 1 ¼ cup of all-purpose flour 2 tsp of baking powder ¼ tsp of salt 3 tbsp of sugar 1 ¼ cup of non-dairy milk 2 tbsp of coconut oil 2 tsp of vanilla extract Topping Cocofrio ice cream   Method: To make the berry sauce, combine the berries, sugar and vanilla extract in a saucepan. Ingredients ½ cup cashews ½ cup almonds ½ cup oats ½ cup shredded coconut ¼ cup cacao powder 1 tbsp chia seeds or flax seeds 1 cup nut butter 20 medjool dates, pitted 2 tbsp coconut oil 2 tbsp rice malt syrup 1 tsp vanilla extract ½ cup extra shredded coconut (optional)   Method Put all ingredients in a food processor and blend until smooth or to a desired consistency. In the palm of your hand, roll mixture into evenly sized balls. (Aprox. 1-2 tbs in size) Place extra shredded coconut in a bowl and roll each ball in coconut until well coated.
