Peanut Butter Cookie Ice Cream Sandwiches
Perfect for an afternoon pick me up!
You will need:
1 egg or chia egg, 2 Tbsp coconut sugar, 2 Tbsp peanut butter, 3 Tbsp honey, 2 Tbsp coconut oil, melted, 2 cups almond flour
¼ cup tapioca flour, plus more for rolling, ½ tsp baking soda
½ tsp cinnamon, ⅛ tsp sea salt
Preheat oven to 180 degrees C. Line a baking tray with baking paper.
In a small bowl, whisk together the egg, coconut sugar, peanut butter, honey and coconut oil
until creamy.
Fold in the almond flour, tapioca flour, baking soda, cinnamon, and sea salt.
Lay a piece of baking paper down on a flat surface and sprinkle with tapioca flour. Roll out the dough to about 1
-2cm in thickness with a rolling pin.
Use cookie cutters to slice cookies out of the dough then transfer them to a baking pan
