Cocofrio Healthy Stuffed Easter Eggs
Who said you can't indulge healthily at Easter time?
The perfect garnish for a healthy easter ice cream cone!
You will need:
10 medjool dates
½ cup peanut butter
½ cup roasted peanuts, chopped
2 blocks dark chocolate
Sea salt
Melt the chocolate over a double boiler or microwave. Line a baking tray with baking paper. Open up the dates, remove the pits and arrange on a tray. Use a spoon to dollop peanut butter inside the dates, close the dates around the peanut butter. Use a fork to dunk the dates into the melted chocolate, coating completely and letting the excess chocolate drip off. Place back onto the prepared tray. Repeat with remaining dates. Sprinkle with chopped peanuts and sea salt and place in the freezer to set.
Enjoy as a sweet treat instead of an easter egg this year, or perfect served on top of a bowl of Cocofrio.
