Loco Coco Bliss Balls
Ingredients

- ½ cup cashews
- ½ cup almonds
- ½ cup oats
- ½ cup shredded coconut
- ¼ cup cacao powder
- 1 tbsp chia seeds or flax seeds
- 1 cup nut butter
- 20 medjool dates, pitted
- 2 tbsp coconut oil
- 2 tbsp rice malt syrup
- 1 tsp vanilla extract
- ½ cup extra shredded coconut (optional)
- Put all ingredients in a food processor and blend until smooth or to a desired consistency.
- In the palm of your hand, roll mixture into evenly sized balls. (Aprox. 1-2 tbs in size)
- Place extra shredded coconut in a bowl and roll each ball in coconut until well coated.
- Place balls in the freezer for 1-2 hours to set.
- Serve up with a scoop (or 2!) of your favourite cocofrio ice cream!
