Loco Coco Bliss Balls

Ingredients
  • ½ cup cashews
  • ½ cup almonds
  • ½ cup oats
  • ½ cup shredded coconut
  • ¼ cup cacao powder
  • 1 tbsp chia seeds or flax seeds
  • 1 cup nut butter
  • 20 medjool dates, pitted
  • 2 tbsp coconut oil
  • 2 tbsp rice malt syrup
  • 1 tsp vanilla extract
  • ½ cup extra shredded coconut (optional)
  Method
  1. Put all ingredients in a food processor and blend until smooth or to a desired consistency.
  2. In the palm of your hand, roll mixture into evenly sized balls. (Aprox. 1-2 tbs in size)
  3. Place extra shredded coconut in a bowl and roll each ball in coconut until well coated.
  4. Place balls in the freezer for 1-2 hours to set.
  5. Serve up with a scoop (or 2!) of your favourite cocofrio ice cream!
